Assessing the nutritional quality of Pleurotus ostreatus (oyster mushroom)

This study evaluates the nutritional, proximate, vitamin, and amino acid contents of *Pleurotus ostreatus* (oyster mushroom). The results show that *Pleurotus ostreatus* contains 43.42% carbohydrate, 23.63% crude fiber, 17.06% crude protein, 8.22% ash, 1.21% lipid, and 91.01% moisture in fresh samples, with corresponding values of 6.46% moisture and 91.01% moisture in dry samples. The monosaccharide and disaccharide profile includes glucose, xylose, fructose, galactose, trehalose, chitobiose, maltose, sucrose, and lower amounts of cellobiose, erythrose, and unidentified sugars. The mineral content is dominated by potassium (12.25 mg), iron (9.66 mg), and magnesium (7.00 mg). Vitamins A, C, and E are present in significant amounts, with vitamin B2 being the highest concentration at 92.97 mg/kg. The amino acid profile includes 13 amino acids, with lysine being the highest essential amino acid and aspartic acid being the highest non-essential amino acid.
